Life Staple #2: Roasted Vegetables

One of my favorite ways to prepared hearty vegetables is to roast them. All roasted vegetables are super easy to make; they require little preparation, even less attention while they cook, and always prove to be a tasty side dish that adds great texture and deep, developed flavors. Though it may seem counter intuitive to crank the oven up to 400 degrees in the middle of the summer, I can’t resist roasted vegetables (especially when there are so many great summer fruit roasting options), so they are a year-round staple in our house.  As long as you choose vegetables with some substance and roast at a high temperature  you are guaranteed to pull a great addition to any meal.  Check out some seasonal Roasted Vegetable options.
